Paul’s Oatmeal

This oatmeal recipe is made with rolled oats but consider using steel cut oats which are less likely to raise blood sugar levels. We like Farmers We Know Organic Sprouted Rolled Oats, but any organic oats will do. You may have to follow the directions for the oatmeal of choice and then increase or decrease water to compensate for the suggested add ins.

Serves 6-8 (I like to make a batch and warm up a serving daily)


Ingredients

  • 3 cups oatmeal of choice

  • 6 cups water

  • 1/2 tsp salt

  • 2 tsbls organic chia seeds and/or ground flaxseeds

  • 4 tsps of cinnamon or more to taste

  • 3 scoops collagen

  • 3 organic pasture raised eggs

Optional Toppings

  • Organic Hemp Heart Seeds

  • Organic Blueberries

  • Chopped Walnuts

  • Banana


Directions

Heat water and salt to boiling. Add oatmeal and reduce heat. Partially cover pot with lid. Cook for 8 minutes. Add collagen slowly stirring as you go until completely combined. Add chia and/or flaxseeds and cinnamon stirring until fully incorporated. Add eggs. (I crack them into the oatmeal). Stir for a minute or more until you see the cooked whites mixed in with the oatmeal. Continue to cook on low for another 1-2 minutes. Cook longer for thicker oatmeal and add liquid for thinner oatmeal based on your preference. Remove from heat and allow to sit for a few minutes if possible.

Spoon into a bowl, add toppings of choice and ENJOY!
