Mediterranean Bean Salad
Healthy, simple, and affordable. True love.
This recipe varies each time I make it depending on what I have in stock.
For the Bean Salad
1 can of black beans
1 can of kidney beans
1 cup chopped tomatoes or diced canned tomatoes
1/2 to 1 cup cucumber chopped
1/3 cup red onion chopped
1/2 cup sliced or chopped kalamata olives
1/4 cup or more of chopped mint
salt and pepper
Drain and rinse beans and add to a bowl with the remaining ingredients.
Greek Dressing
1/4 cup EVOO
1/3 cup red wine vinegar
1 crushed clove of garlic
1/2 tsp dried oregano
salt and pepper to taste
Add all dressing ingredients to a small bowl or jar and whisk or shake well. Drizzle over plated greens and mix the desired amount into the bean salad.
Spoon the bean salad onto the dressed greens and sprinkle with feta cheese.
