Grilled Rosemary Dijon Lamb Chops
Ingredients
2 Tablespoons Dijon Mustard
2 Tablespoons Olive Olive Oil
2 Tablespoons Finely Chopped Fresh Rosemary
1 Clove of Garlic (optional)
4 to 6 Grass-fed Loin Lamb Chops
Directions
In a small bowl, combine the mustard, rosemary, and garlic if using. Add olive oil and stir until combined. Add salt and pepper to taste. Spread the mixture on the lamb chops and refrigerate for 30 minutes. When ready to cook add the chops to a warm grill and cook for about 3 to 4 minutes. Flip and cook another 3 to 4 minutes or until the desired doneness. I like mine medium rare. We usually take them off the grill at 130 to 135 degrees and let them rest for about 10 minutes.
