Egg Scramble with Ground Meat

Egg and meat scramble - a hearty, satisfying meal in just one serving!

Ingredients

3 Eggs

2 to 3 ounces ground turkey or beef

2 cups of vegetables of choice

Oil or butter for the pan

Salt and pepper for veggies and eggs

Recommended: 1/2 cup Cottage Cheese for a side dish. To increase vegetable intake and reduce fat and calories, make without feta and add 1/4 cup of cottage cheese to eggs. Add a side salad or more sautéed veggies on the side.

Instructions

  1. Cook 2 oz of ground turkey or beef until perfectly done in a skillet.

  2. 2. Toss in 1 cup of spinach (or your favorite greens) and 1 cup of chopped tomatoes, mushrooms, or any veggies you love.

  3. 3. Beat 2 whole eggs and 1 egg white, season with salt and pepper, and pour in the pan with meat and vegetables and cook until it's just how you like it.

Top it all off with a 1/4 cup of cottage cheese on the side!

Boom! That's a whopping 45 grams of protein right there. And trust me, it's delicious! 😋
